Ingredients

    • 4 tomatoes, diced (or 1 cup cherry tomatoes, halved)
    • ¼ cup red onion, finely minced
    • 2 tbsp parsley, finely minced
    • 2 tbsp cilantro, finely minced
    • 2 tbsp olive oil
    • 1 tsp salt
    • ½ tsp pepper
    • ½ tsp cumin

Directions

    • Prepare the tomatoes:

      If using large tomatoes, dice them into small cubes. If using cherry tomatoes, simply halve them. Place the tomatoes in a large mixing bowl.
    • Add the onions:

      Finely mince the red onion and add it to the bowl with the tomatoes. The smaller the onion pieces, the better the flavors will blend into the salad.
    • Herbs:

      Mince the parsley and cilantro as finely as possible. These herbs will add freshness to the salad. Add them to the tomato and onion mixture.
